How Long Do Leftovers Last in the Fridge? An Australian Guide

How long do leftovers last in the fridge? In Australia, food authorities usually say a few days — if you cool food quickly, keep the fridge at 5°C or below, and reheat until steaming hot. This guide summarises current advice from FSANZ, the NSW Food Authority and the Food Safety Information Council, with links to the source pages.

The quick rules

  • Fridge at 5°C or colder for perishable food (FSANZ food safety basics).
  • Cool, cover and refrigerate within 2 hours (NSW Food Authority — Leftovers).
  • Eat fridge leftovers within 3 days; cooked rice and pasta within 2 days (NSW Food Authority).
  • Reheat until steaming hot all the way through. The Food Safety Information Council recommends at least 75°C in the centre (FSIC — Leftovers).
  • 2-hour / 4-hour rule: under 2 hours in the 5–60°C danger zone — refrigerate again; 2–4 hours — eat now; over 4 hours — throw out (FSANZ 2-hour / 4-hour rule).

Airtight or vacuum containers help limit air exposure and fridge smells, but they don't change these time and temperature rules. Stick to the official leftover times.

Cool leftovers quickly

Bacteria grow fastest between 5°C and 60°C. FSANZ says cool cooked food quickly — for example in shallow containers in the fridge — and don't leave it at room temperature for long.

For food businesses, FSANZ's two-stage cooling is: 60°C to 21°C within 2 hours, then 21°C to 5°C within a further 4 hours (FSANZ — Cooling and reheating food). At home, use the same idea: get heat out of big pots fast.

  • Split large batches into smaller portions so they cool faster (NSW Food Authority and FSANZ).
  • Once steam stops rising, cover and put food in the fridge promptly.
  • Keep leftovers away from raw meat (NSW Food Authority).

Glass containers make portioning easy. The Vuumex Glass Vacuum Food Container Set has four borosilicate glass sizes (470ml, 800ml, 1.4L and 2.7L), so you can cool lunch serves and family leftovers without one deep pot sitting warm in the middle.

How long do leftovers last in the fridge?

NSW Food Authority: eat leftovers within 3 days; cooked rice and pasta within 2 days. The Food Safety Information Council says use perishable leftovers within two to three days.

FSANZ Listeria advice is stricter for vulnerable people (eat refrigerated leftovers within about a day). If someone at home is pregnant, elderly or immunocompromised, prefer fresher leftovers and throw food out when unsure.

Won't eat it in time? Freeze it. NSW Food Authority: freeze leftovers for up to 3 months, defrost in the fridge, and use within 24 hours of defrosting. Our guide to freezing leftovers safely covers cooling, thawing and refreezing step by step.

Leftover fridge times for common foods

These times assume food was cooled promptly, stored at 5°C or below, and didn't sit out past the 2-hour / 4-hour rule. We only list times the sources actually give (or the general leftover timeframe).

Food Fridge timeframe Source
Most cooked leftovers (curries, stews, roast veg) Eat within 3 days NSW Food Authority (general leftovers)
Cooked chicken and cooked meats Eat within 3 days NSW Food Authority leftover guidance
Cooked rice Within 2 days; reheat only once until steaming hot NSW Food Authority
Cooked pasta Within 2 days; reheat only once until steaming hot NSW Food Authority
Takeaway rice Eat soon after buying NSW Food Authority
Opened canned leftovers Follow the label; then treat like fresh leftovers NSW Food Authority

Packaged food is different because it carries a printed date. Our guide to use-by vs best-before dates explains what each one means and why opening a pack changes things.

Set a date when food goes in so older leftovers get eaten first. The date dial on Vuumex lids helps track storage time — it doesn't make food safe for longer, it just stops the guessing. More tips: Info and Tips.

Reheating leftovers safely

  • Reheat until steaming hot throughout. FSANZ: reheat quickly to piping hot; FSIC: aim for at least 75°C in the centre.
  • NSW Food Authority: never reheat rice or pasta more than once.
  • Only reheat what you'll eat now — repeated warm-ups mean more time in the danger zone.

Borosilicate glass bases can go from fridge to microwave or oven with lids off. Always remove plastic lids before heating. See the container set for sizes suited to single serves and bigger batches.

The 2-hour / 4-hour rule

Both FSANZ and the NSW Food Authority use this for food held between 5°C and 60°C:

  • Under 2 hours: use now or put back in the fridge.
  • 2 to 4 hours: use now — don't refrigerate for later.
  • Over 4 hours: throw it out.

Time is cumulative: add every stretch the food spent out of the fridge. If you're not sure, throw it out.

Easy habits that help

  1. Portion leftovers soon after cooking, then refrigerate once steam stops.
  2. Use shallow containers for soups, stews and rice.
  3. Keep raw meat on a lower shelf.
  4. Date containers the day you store them.
  5. Plan rice and pasta for the next day, or freeze them.
  6. Thaw frozen meals in the fridge, not on the bench (FSANZ).

Choosing containers? Glass is often easier to clean and reheat than plastic — see our glass vs plastic food storage guide. Vacuum lids limit air exposure and the date dial helps you track how long food has been stored; neither replaces the fridge limits above.

Frequently asked questions

NSW Food Authority: within 3 days if cooled promptly and kept below 5°C. Cooked rice and pasta: within 2 days. FSIC: use perishable leftovers within two to three days.

How long does cooked chicken last in the fridge?

Cool quickly, store below 5°C, and eat within the general leftover limit of 3 days. Reheat until steaming hot.

How long does cooked rice last in the fridge?

Within 2 days (NSW Food Authority). Cool it quickly, don't leave it out for hours, and reheat only once until steaming hot. Eat takeaway rice soon after purchase.

Does vacuum sealing make leftovers last longer?
